Oriental Vodka

The “Oriental Vodka“, originating from the Gao family of Xinzhou, Shanxi, is a traditionally handcrafted liquor known as “Lao Bai Shao.” During the Ming and Qing dynasties, the Gao family established various businesses such as money shops, fur and grain stores in Guihua, Baotou, Fengzhen, and Salar Qi, as well as in the provinces of Shanxi, Gansu, Ningxia, and Qinghai. Often taking advantage of the situation, they opened distilleries and pottery workshops. The harsh and cold climate of the regions beyond the Great Wall and the northern borders necessitated high-proof white liquor for the local nomads and traveling merchants to ward off the cold. The Gao family’s “Lao Bai Shao” uses high-quality red sorghum, a specialty of Xinzhou, ensuring genuine and quality ingredients. The master brewers strictly adhere to ancient brewing techniques, passing down their skills through generations, meticulously crafting the liquor. As a result, the “Lao Bai Shao” of the Gao family in Xinzhou became a renowned brand along the thousands of miles of trade routes heading west and north.

What is Chinese Baijiu?

Baijiu is a traditional Chinese distilled spirit made mainly from grains like sorghum or rice. It’s one of China’s most popular alcoholic beverages, known for its high alcohol content, typically ranging from 40% to 60%. Baijiu has a unique flavor and is often used in social and ceremonial occasions in China.

Baijiu’s origin in Chinese culture dates back to the Shang Dynasty (1600–1046 BC) and was refined during the Eastern Han Dynasty (25–220 AD) with improved distillation techniques. Historically, it has been a key part of religious ceremonies, traditional rituals, and social events, symbolizing purification and hospitality. Throughout Chinese history, baijiu has evolved with regional variations and has become a cultural icon, embodying China’s rich heritage and social customs.

 
 
 

 

“Oriental Vodka” is not a formal category but could informally refer to Asian spirits like Baijiu (China), Soju (Korea), or Shochu (Japan). These clear, distilled spirits share similarities with vodka in appearance and alcohol content, but each has unique flavors and cultural significance in its respective country. The term might be used colloquially to relate these spirits to the globally recognized vodka.

Baijiu, a traditional Chinese spirit, is made through these key steps:

  1. Ingredients: Mainly sorghum, but also wheat, rice, corn, or barley.
  2. Jiuqu Making: Preparation of the fermentation starter with molds, yeasts, and bacteria.
  3. Steaming Grains: Steaming the grains to gelatinize starches.
  4. Cooling and Mixing: Cooling steamed grains and mixing with Jiuqu.
  5. Fermentation: Transferring the mixture to fermentation pits or jars for several weeks to months.
  6. Distillation: Distilling the fermented mixture, often in pot stills.
  7. Aging: Optionally aging the distilled spirit in ceramic vessels.
  8. Blending: Blending different batches to achieve the desired flavor.
  9. Bottling: Bottling the final product, usually at high proof.

Each step influences Baijiu’s unique and complex flavor, characterized by strong and often fiery notes.
