- Steaming Grains: Steaming the grains to gelatinize starches.
- Cooling and Mixing: Cooling steamed grains and mixing with Jiuqu.
- Fermentation: Transferring the mixture to fermentation pits or jars for several weeks to months.
- Distillation: Distilling the fermented mixture, often in pot stills.
- Aging: Optionally aging the distilled spirit in ceramic vessels.
- Blending: Blending different batches to achieve the desired flavor.
- Bottling: Bottling the final product, usually at high proof.
